Versilia offers a wide range of environments ranging from stretches of golden sand coastline flanked by lush pine forests, hills covered in olive groves and vineyards clustered between the coastline and magnificent peaks of the Apuanan Alps. This is reflected in the multitude of flavours of its cuisine, ranging from seafood to traditional mountain recipes.
Typically the Versilia coastline is renowned for its seafood cuisine throughout the year. It skilfully employs fish in simple, refined dishes, traditional soups or creative appetizers and starters served with a wide range of locally produced vegetables. All cooked in a variety of manners from grilled, fried, barbequed to sauté.
In the villages at the foothill of the Apuanan Alps known as the ‘Comunità Montana Alta Versilia’ which include Seravezza, Stazzema, Camaiore and Montignoso, famous all over the world for its prestigious marble caves have many different types of gastronomic produce.
A large part of this territory is agricultural and still maintains its original tradition in the production processes. Preserving the high quality of the wines from the hills of Monti di Ripa and Strettoia, extra virgine olive oil, salami’s typical of Alta Versilia distinguish themselves for the genuine quality and artisan tradition. Worthy of a mention are the variety of honey’s produced in this area.
Typical dishes, such as; pheasant or ‘castagnaccio’ a cake made from chestnut flour or ‘zuppa di farro’, a delicious barley soup. Varied types of breads can be found in the local bakeries near to the quarry areas such as ‘Focaccia del Cavatore’ the quarryman’s yeast bread, ‘pane Marocco’ made from corn and white flour, olives, rosemary and chilli pepper, bread from ‘Azzano’ made with brown flour and potatoes, and much more...
